ALMOND NUT π BREAD & I go together,
real bad!
There is just something so comforting and wholesome about a warm slice of banana bread. Every bite really feels like a reminder to stop, take a deep breathe in and really enjoy the simple pleasures of life. Whether you enjoy with a nice cup of Joe or indulge in it as a late night snack (big back activities for me, hehe), it just always bring me joy!
& let us please remember, there are many ways to make one thing! You create it to your liking however that may be! Judgement free zone here friends <3
2 to 3 (in my case 4π¬) very ripe bananas
1/3 to 1/2 cup butter (salted or unsalted)
1/2 teaspoon baking soda
Pinch of salt
1 cup sugar
2 eggs
1 to 1 & 1/2 cups all-purpose flour
1 teaspoon vanilla extract (optional)
Almonds, roasted ones! my favorite! You can leave plain, or add in anything your heart desires. (Usually pairs great with raisins, fruit, honey or walnuts!)

Mash the Bananas: Peel and mash the bananas, keep some chunks for added texture! I like it a bit thickkkk. Set aside.
Mix Dry Ingredients: In a separate bowl, sift together the flour and baking soda. Set aside.
Cream Butter and Sugar: In a large mixing bowl, combine the butter and brown sugar. Mix on slowly until smooth.
Add Wet Ingredients: Add the eggs and mashed bananas to the butter-sugar mixture. Mix until just combined.
Incorporate Dry Ingredients: Gradually add the flour mixture to the wet ingredients, one tablespoon at a time, mix until fully combined.
Lightly spray a loaf pan with oil and pour the batter in.
Bake: Bake at 350°F for 35-45 minutes, depending on your pan size. Check for doneness by inserting a toothpick into the center; it should come out clean.
If desired, fold in any type of nut or add on before baking! I absolutely love roasted almonds in my banana bread!
Drizzle honey or peanut butter! (My fave is peanut butter!)
