#DIY STUFFED MUSHROOMS + SHRIMP SCAMPI

Hi everyone!

Welcome back to another #DIY dinner recipe! This is similar to a dinner one might have at Olive Garden, soooo… lets just call this a ‘recreation’ lol. I go through food craving phases all the time & I am currently in a mushroom one😭. I laaaaaav mushrooms, mmmm and stuffed ones are my absolute to die for faaavorite! Who would have ever thought because at one point I thought um ew gross, who tf eats fungus - and look at me now, lololol!

Here is my super simple, super delicious take on 👇🏽

STUFFED MUSHROOMS -

HERE IS WHAT TO DO

You are going to want to break each stem off of your mushrooms, gently gut out the insides of them & make room in them for some stuffing.

Be sure to keep stems + cleaned insides because that will be minced for the stuffing!

Mince your garlic

Mince your parsley

I like to add my mushroom stems + the extra inside, olive oil, parsley and garlic into a blender/mixer and mix them all together.

Once minced, empty into a bowl.

Add your grated Romano cheese & your bread crumbs to the minced stuffing.

Mix it all together! Reeeeeally get ya fingers in there!

Gently fill each mushroom & don’t over pack them, the breadcrumbs will rise a bit and the mushrooms will shrink!

sprinkle some more olive oil on top of them and add some breadcrumbs + grated Romano cheese as a toasted coating.

Bake at 350 for 35 min.

SHRIMP SCAMPI
  • 1 pound of shrimps

  • minced garlic

  • minced parsley

  • 2 tbsp. olive oil

  • salt + pepper

  • 4 tbsp. butter

  • 1/2 fresh squeezed lemon

  • red pepper flakes

  • 1/4 cup dry white wine

Season your shrimp with the salt, pepper, minced garlic, minced parsley, olive oil, butter, red pepper flakes and dry white wine. Let it marinate for 10-15 minutes, while you warm your pan on medium heat with slight olive oil covering your surface.

If you already have cooked shrimp - let simmer for about 7-8 minutes on low to medium heat, you don’t want to over cook them or else they will become too tender!

If you have uncooked shrimp - cook on medium heat for 10 minutes or until pink and let simmer on low-medium heat for 5 minutes.

Pair with some angel hair pasta, some linguini, some baked asparagus, and mama Mia you shrimp scampi! Feel free to add whatever you’d like btw! Thats the beauty of it!
